Mandarin Ice Cream Sandwiches

Georgia – Most of my favourite food websites and blogs are written by people in North America and Europe so their seasons are opposite to ours and their latest recipes use fruits like nectarines and peaches, which are really expensive or unavailable here in New Zealand. One of the reasons I love www.trotski-ash.com is that it’s written by two women from Melbourne which means we have access to the same fresh produce as they do. Their latest post was for Mandarin Ice Cream Sandwiches and since I have an ice cream maker I had to make them! Even though it’s freezing outside. I think the ice cream would probably go better with a plainer biscuit like vanilla (the recipe was with chocolate biscuit sandwiches) as the flavours kind of over-ride each other. Still, the ice cream is delicious!
