Yoghurt Lemon and Poppyseed Muffins

Georgia – These are one of my favourite things I’ve made recently. I got the recipe off the smitten kitchen website (http://smittenkitchen.com/2010/01/poppy-seed-lemon-cake/) but changed the quantities around a little and added some real lemon juice too so they would be really lemony and moist. I also used HEAPS of poppy seeds because I like how they give the muffins a little crunch. The recipe called for a loaf but making mini muffins (or muffins) means you can give them as gifts which is what I like to do, especially because then I won’t eat them all myself!
